Vegan Tofu Matar Paneer

Ingredients

  • Tofu
  • Frozen peas
  • Onion
  • Ginger
  • Garlic
  • Green chili
  • Tomatoes
  • Cashews
  • Plant-based milk
  • Cumin
  • Coriander
  • Red chili powder
  • Turmeric
  • Cinnamon
  • Garam masala
  • Kasoori methi

Preparation

  1. Heat oil in a pan and sauté onions until golden brown

  2. Add ginger, garlic, and green chili, and cook for a minute until fragrant

  3. Stir in chopped tomatoes and all the spices, and cook until the tomatoes soften and form a sauce

  4. Blend cashews with plant-based milk to create a creamy mixture and add it to the pan

  5. Mix in frozen peas and tofu cubes, then simmer until the peas are tender and the tofu is heated through

  6. Finish by stirring in garam masala and kasoori methi, and serve hot
