Easy Creamy Masala Pasta

Ingredients

  • 1/2 box of pasta
  • 10 cashews, soaked 4+ hrs or in boiling water for at least 15 min
  • 1/2 onion, chopped
  • 2 garlic cloves
  • 1/2 inch ginger, minced
  • 2 tomatoes, chopped
  • A handful of spinach

Spices

  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp garam masala
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric
  • 1 tsp kasoori methi (optional)

Preparation

  1. Cook pasta to package instructions and set aside.

  2. In a pan over medium heat, add oil and then onion, ginger, and garlic. Saute until onion is transparent.

  3. Add tomatoes and all spices except kasoori methi (if using). Cook until tomatoes are soft and keep together.

  4. Turn off the heat and let the mixture cool. Blend it with the soaked cashews.

  5. Pour the mixture back into the pan and heat on medium. Add about 1/4 cup water to adjust thickness of sauce if needed. After a few minutes, add kasoori methi, 2-3 minutes later, add a handful of spinach and the pasta. Mix it all together and serve.
