Roasted Red Pepper Pasta Sauce

Ingredients

  • 4 red bell peppers
  • 2 tablespoons olive oil
  • 5 cloves garlic, peeled
  • 1 large shallot, chopped
  • 1/4 cup cashews
  • handful of basil leaves
  • 1 pound pasta
  • 1/2 cup vegetable broth
  • 2 tablespoons lemon juice

Preparation

  1. Roast the red bell peppers until charred, then peel and remove seeds.

  2. In a skillet, heat olive oil over medium heat and sauté garlic and shallot until softened.

  3. Blend the roasted peppers with cashews, vegetable broth, lemon juice, and the sautéed garlic and shallot until smooth to make the sauce.

  4. Cook pasta according to package instructions.

  5. Toss the cooked pasta with the sauce and fresh basil leaves before serving.
