Vegan Coconut Tomato Pasta

Ingredients

  • 10 oz pasta
  • 1 tbsp olive oil
  • 1 large red onion, diced
  • 2 cloves garlic, minced
  • 1 cup fresh cherry tomatoes
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1 cup coconut milk
  • 2 tbsp nutritional yeast
  • 1 tbsp apple cider vinegar
  • Salt and pepper

Preparation

  1. Cook the pasta according to instructions on packaging.

  2. Meanwhile, heat the olive oil in a pan, and cook the onion and garlic for a few minutes.

  3. Add the tomatoes, tomato paste and paprika, and cook for 5 minutes more until the tomatoes soften.

  4. Add the coconut milk, nutritional yeast, and apple cider vinegar, stir together for a couple of minutes, then add the pasta and season to taste with salt and pepper.
