Vegan Coconut Tomato Pasta
Ingredients
- 10 oz pasta
- 1 tbsp olive oil
- 1 large red onion, diced
- 2 cloves garlic, minced
- 1 cup fresh cherry tomatoes
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 cup coconut milk
- 2 tbsp nutritional yeast
- 1 tbsp apple cider vinegar
- Salt and pepper
Preparation
Cook the pasta according to instructions on packaging.
Meanwhile, heat the olive oil in a pan, and cook the onion and garlic for a few minutes.
Add the tomatoes, tomato paste and paprika, and cook for 5 minutes more until the tomatoes soften.
Add the coconut milk, nutritional yeast, and apple cider vinegar, stir together for a couple of minutes, then add the pasta and season to taste with salt and pepper.
