Broccoli Pasta with Chickpeas

Ingredients

  • 3 cups pasta of choice
  • 1 medium red onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 cups broccoli florets
  • 3/4 cup coconut milk
  • 1 tbsp nutritional yeast
  • Salt to taste
  • 1 can chickpeas, drained and rinsed

Preparation

  1. Cook the pasta according to instructions on packaging.

  2. Meanwhile, sauté the onion and garlic in a different pan in either water or oil.

  3. When they soften, add the broccoli florets and tomato paste and continue to cook for a further 4-5 minutes.

  4. Next add the coconut milk and nutritional yeast, stirring everything together.

  5. Season to taste with salt and add the pasta together with 1/4 cup pasta water and the chickpeas.

  6. Stir everything together for a few more minutes to allow the sauce to thicken and serve.
