Outrageously Orange Pasta

Ingredients

  • 1 roasted carrot
  • 1 garlic clove
  • 2 Tbsp nutritional yeast
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup walnuts, soaked 6 hrs
  • 1/2 cup veggie broth
  • 6 oz @tolerantfoods lentil pasta or pasta of choice
  • 1 cup chopped Kabocha squash
  • 1 cup halved orange grape tomatoes
  • Parsley

Preparation

  1. Blend together roasted carrot, garlic clove, nutritional yeast, walnuts, veggie broth, salt, and pepper until smooth.

  2. Cook pasta according to directions, and add Kabocha squash 5 minutes before done cooking.

  3. Drain pasta and squash and return to pot with orange grape tomatoes and sauce.

  4. Toss together and garnish with parsley and black pepper.
