Roasted Red Pepper Pasta Sauce
Ingredients
- 4 red bell peppers
- 2 tablespoons olive oil
- 5 cloves garlic peeled
- 1 large shallot chopped
- 1/4 cup cashews
- basil leaves, handful
- 1 pound your fave pasta
- 1/2 cup vegetable broth
- 2 tablespoons lemon juice
Preparation
Roast the red bell peppers until charred and soft, then peel and remove seeds.
Heat olive oil in a skillet over medium heat and sauté garlic and shallot until fragrant.
Add cashews, basil leaves, lemon juice, and vegetable broth to the skillet.
Blend the mixture with the roasted peppers until smooth to create the sauce.
Cook pasta according to package instructions until al dente.
Toss the cooked pasta with the sauce and serve immediately.
