Vegan Basil Pesto Pasta
Ingredients
- 1-2 cups packed basil leaves
- 1/3 cup pine nuts (walnuts, sunflower seeds, or almonds also work)
- 1/4 cup olive oil
- 3 cloves garlic
- 1 tbsp lemon juice; more to taste
- 3 tbsp nutritional yeast
- 1/2 tsp black pepper
- 1/2 tsp chili flakes
- 1/2 tsp salt; more to taste
- 3-4 servings cooked pasta
Preparation
Cook 3-4 servings of pasta according to package instructions.
In a food processor, blend all the pesto ingredients until smooth and creamy.
Add more salt and lemon juice to taste.
Mix the pesto with the cooked pasta and serve.
