Hummus Basil Pesto Pasta
Ingredients
- 1/2 cup pine nuts
- 3 cups basil leaves
- 4 minced garlic cloves
- 1 tablespoon nutritional yeast
- 2 tablespoons lemon juice
- about 1/4 cup water
- 1/4 cup hummus
- salt to taste
- black pepper to taste
- cooked pasta (amount as desired)
- cooked mushrooms (amount as desired)
- lightly steamed broccoli (amount as desired)
Preparation
Toast 1/2 cup pine nuts on medium heat until just golden brown, being careful not to burn them as they toast quickly.
In a food processor, blend the toasted pine nuts, 3 cups basil leaves, 4 minced garlic cloves, 1 tablespoon nutritional yeast, 2 tablespoons lemon juice, and about 1/4 cup water until finely minced.
Add 1/4 cup hummus and blend until fully incorporated.
Taste and add salt and black pepper as needed.
Transfer the mixture to a bowl and mix in the desired amount of cooked pasta, cooked mushrooms, and lightly steamed broccoli.
