Hummus Basil Pesto Pasta

Ingredients

  • 1/2 cup pine nuts
  • 3 cups basil leaves
  • 4 minced garlic cloves
  • 1 tablespoon nutritional yeast
  • 2 tablespoons lemon juice
  • about 1/4 cup water
  • 1/4 cup hummus
  • salt to taste
  • black pepper to taste
  • cooked pasta (amount as desired)
  • cooked mushrooms (amount as desired)
  • lightly steamed broccoli (amount as desired)

Preparation

  1. Toast 1/2 cup pine nuts on medium heat until just golden brown, being careful not to burn them as they toast quickly.

  2. In a food processor, blend the toasted pine nuts, 3 cups basil leaves, 4 minced garlic cloves, 1 tablespoon nutritional yeast, 2 tablespoons lemon juice, and about 1/4 cup water until finely minced.

  3. Add 1/4 cup hummus and blend until fully incorporated.

  4. Taste and add salt and black pepper as needed.

  5. Transfer the mixture to a bowl and mix in the desired amount of cooked pasta, cooked mushrooms, and lightly steamed broccoli.
