Vegan Pesto Pasta Salad
Ingredients
- 9 cups (500g) Pasta of choice
- 1 cup (150g) cherry tomatoes
- 1/2 cup (90g) olives
- 2 cups (20g) arugula
Pesto
- 2 cups (40g) fresh basil
- 3 garlic cloves
- 1/4 cup (35g) toasted pine nuts
- 1/4 cup (15g) nutritional yeast
- 1/4 cup (56g) olive oil
- Salt, to taste
Preparation
Cook the pasta and keep some of the pasta water.
Make pesto by adding the pesto ingredients to a food processor and blending to combine.
Pour the pesto to a bowl, along with the pasta and pasta water.
Then add the cherry tomatoes, olives and arugula and mix until everything is coated with the pesto.
Top with some toasted pine nuts and enjoy
