Protein-Packed Creamy Pea Pasta
Ingredients
- 200g frozen garden peas
- 100g frozen spinach
- 1 lemon
- 2 garlic cloves
- 25ml olive oil
- 50g toasted pine nuts
- 10g nutritional yeast
- 300g silken tofu
- Salt and pepper
- 500g spaghetti
- Chilli oil (optional)
- Fresh basil
Preparation
Boil salted water, add peas and spinach for 30-45 seconds to defrost, then drain and cool
In the same water, cook spaghetti until al dente
In a blender, add lemon juice, garlic, olive oil, three-quarters of the peas, spinach, three-quarters of the pine nuts, nutritional yeast, silken tofu, salt and pepper, and blend until smooth
Pour the sauce into a pan, heat gently and stir in a splash of pasta water, then add the drained pasta and toss until fully coated
Plate it up and top with the remaining peas and pine nuts, a drizzle of chilli oil, extra nutritional yeast, cracked black pepper and fresh basil
