Lemon Parsley Pasta

Ingredients

  • 1 cup pasta cooked
  • 1/2 cup pasta water
  • 1/2 cup milk (used macadamia milk from @floria_tradingbh)
  • 1 cup fresh parsley leaves
  • 1/4 cup lemon juice
  • 2 tablespoons lemon rind
  • A dash of salt and pepper
  • 1 garlic clove crushed
  • 1 teaspoon olive oil

Preparation

  1. Sauté garlic with lemon rind until fragrant

  2. Add all liquids and seasoning and mix until simmering

  3. Turn off heat and add the pasta and parsley

  4. Serve and enjoy

Tips

  1. It looks dry and bland, but try it and you will see that it is gooey and full of flavors

  2. It can be served as a side dish for anything heavy or creamy
