Creamy Vegan Pasta with Vegetables

Ingredients

Sauce

  • Half a block of silken tofu
  • 1 clove of garlic (can sub for garlic powder)
  • Splash of apple cider vinegar
  • Juice of half a lemon
  • Splash of oat milk
  • Tbsp mixed herbs
  • Lots of salt and pepper

Additional

  • Pasta
  • Mushrooms
  • Peas
  • Spinach

Preparation

  1. Cook the pasta according to package instructions.

  2. Blend all the sauce ingredients together until smooth.

  3. Stir the sauce through the cooked pasta, incorporating mushrooms, peas, and spinach.
