Creamy Vegan Pasta with Vegetables
Ingredients
Sauce
- Half a block of silken tofu
- 1 clove of garlic (can sub for garlic powder)
- Splash of apple cider vinegar
- Juice of half a lemon
- Splash of oat milk
- Tbsp mixed herbs
- Lots of salt and pepper
Additional
- Pasta
- Mushrooms
- Peas
- Spinach
Preparation
Cook the pasta according to package instructions.
Blend all the sauce ingredients together until smooth.
Stir the sauce through the cooked pasta, incorporating mushrooms, peas, and spinach.
