Vegan Zucchini Pasta with Creamy Sauce

Ingredients

Sauce

  • 1/2 onion
  • 3 cloves garlic
  • 2 medium zucchinis
  • 3 tbsp nutritional yeast
  • 1/4 cup reserved pasta water
  • 3/4 cup plant milk
  • 1/4 cup cashew butter
  • 1/2 cup basil
  • juice from 1/2 lemon
  • pepper to taste

Pasta and add-ins

  • Pasta of choice
  • Optional: 2 cups white beans for protein

Preparation

  1. Heat oil in a pan over medium heat. Add onions and cook for 5 minutes.

  2. Add garlic and zucchini. Cook until tender, about 10 more minutes.

  3. Add zucchini, garlic and onion to a blender along with the rest of the sauce ingredients. Blend until smooth.

  4. Mix sauce with pasta and white beans if using.
