Sun-Dried Tomato and Tahini Pasta
Ingredients
- 12 oz pasta
- 2/3 cup tahini
- 1 cup sun-dried tomatoes (packed in oil)
- 2 1/2 cup vegetable broth
- 6 cloves garlic, minced
- 1 large yellow onion, diced
- 1 lemon, juiced
- 1 tsp salt
- 1/2 tsp red pepper flakes
- Black pepper, to taste
Optional
- Chopped basil (to garnish)
Preparation
Boil pasta according to package directions, rinse and drain, and pour back into the pot.
Sauté the onion and garlic for about 5 minutes on medium heat, and then add to a blender.
Drain the oil from the sun dried tomatoes, then add to the blender along with the remaining ingredients.
Blend until smooth.
Pour the sauce over the pasta and stir to combine.
Heat for a few minutes on medium heat.
Serve in bowls, garnish with red pepper flakes and basil, and enjoy.
