Cashew Cream Tomato Penne

Ingredients

  • 1 cup cashews
  • 1/2 cup water
  • 1 cup strained tomatoes
  • 1 garlic clove
  • basil
  • thyme
  • salt and pepper
  • pasta

Preparation

  1. Cook the pasta in a large pot according to package directions.

  2. Add cashews, water, strained tomatoes, garlic clove, basil, thyme, salt, and pepper to a high-speed blender.

  3. Blend until thick and creamy.

  4. Stir the sauce into the cooked pasta and serve.
