Cashew Cream Tomato Penne

Ingredients

  • 1 cup cashews
  • 1/2 cup water
  • 1 cup strained tomatoes
  • 1 garlic clove
  • basil
  • thyme
  • salt and pepper
  • penne pasta

Preparation

  1. Add the cashews, water, strained tomatoes, garlic, basil, thyme, salt, and pepper to a high-speed blender.

  2. Blend until thick and creamy.

  3. Cook penne pasta in a large pot of boiling water until al dente.

  4. Stir the sauce into the cooked pasta and serve.
