Cashew Cream Tomato Penne
Ingredients
- 1 cup cashews
- 1/2 cup water
- 1 cup strained tomatoes
- 1 garlic clove
- basil
- thyme
- salt and pepper
- penne pasta
Preparation
Add the cashews, water, strained tomatoes, garlic, basil, thyme, salt, and pepper to a high-speed blender.
Blend until thick and creamy.
Cook penne pasta in a large pot of boiling water until al dente.
Stir the sauce into the cooked pasta and serve.
