Creamy Vegan Pasta with Vegetables
Ingredients
- Pasta
- Mushrooms
- Peas
- Spinach
Sauce
- Half a block of silken tofu
- 1 clove of garlic (can sub for garlic powder)
- Splash of apple cider vinegar
- Juice of half a lemon
- Splash of oat milk
- 1 tablespoon mixed herbs
- Salt and pepper to taste
Preparation
Cook the pasta according to package instructions.
Prepare the mushrooms, peas, and spinach by cooking them until tender.
Blend all the sauce ingredients together until smooth.
Stir the sauce through the cooked pasta and vegetables until well combined.
