Tofu and Cauliflower Curry with Brown Rice
Ingredients
- 1 block tofu
- Half a large cauliflower
- 1 tsp cumin
- 1 tsp turmeric
- 3/4 tbsp cornstarch
- 1 onion, chopped
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 tsp ginger, grated
- 1 small carrot, chopped into small pieces
- Half a can coconut milk
- 1 can chopped tomatoes
Spices
- 1 tbsp tikka masala
- 1 tsp cumin
- 1 tsp turmeric
For serving
- Brown rice
- Fresh parsley
Preparation
Chop the cauliflower and prepare the tofu by mixing cornstarch, cumin, and turmeric, breaking up the tofu, and covering it in the mixture. Place both on a baking tray with baking paper and bake at 200°C for 20 minutes.
In the meantime, sauté onion, garlic, ginger, and carrot in olive oil. Then add the spices, chopped tomatoes, and coconut milk.
Let the mixture simmer, then blend it, and finally add the cooked tofu and cauliflower.
Top with fresh parsley and enjoy with brown rice.
