Scrambled Tofu with Chickpeas and Spices

Ingredients

  • 150g firm tofu
  • 1/2 small onion
  • 1 garlic clove
  • 1/2 tsp turmeric
  • 1/4 tsp black salt
  • 2 tbsp nutritional yeast
  • Black pepper
  • Handful of spinach
  • 60ml soya or oat cream
  • 1 tbsp olive oil
  • 1/4 tin chickpeas

Preparation

  1. In a medium to large frying pan heat the oil on a medium heat

  2. Add the onion and garlic and stir until slightly softened for 4-5 minutes

  3. Using your hands crumble the tofu into the pan and add the chickpeas, turmeric, salt, pepper and nutritional yeast

  4. Stir thoroughly coating the tofu until golden

  5. Pour in the cream, add the spinach and continue to heat and stir for another 2-3 minutes

  6. Serve hot from the pan with toast

Serving suggestions

  1. Serve with vegan bacon, sausages and baked beans for a full English breakfast
