Spiced Vegan Tofu Scramble

Ingredients

  • 150g of firm tofu
  • 1/2 tsp of garlic powder
  • 1/2 tsp of smoked paprika
  • 1 tbsp of nutritional yeast
  • A generous pinch of black salt
  • A pinch of turmeric
  • A dash of unsweetened oat milk
  • Handful of baby spinach (optional)

Preparation

  1. Crumble the tofu with your hands and add it to a pan with a drizzle of olive oil, add all the other ingredients apart from the spinach and cook on a medium heat for 5-8 minutes.

  2. Add the baby spinach and cook for another minute.

  3. Check for seasoning and serve on toast or with your favourite sides.
