Vegan Tofu Scramble Breakfast Dish

Ingredients

  • 150g firm tofu
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tbsp nutritional yeast
  • Generous pinch black salt
  • Pinch turmeric
  • Dash unsweetened oat milk
  • Handful baby spinach (optional)
  • Drizzle olive oil

Preparation

  1. Crumble the tofu with your hands and add it to a pan with a drizzle of olive oil.

  2. Add all the other ingredients except the spinach.

  3. Cook on medium heat for 5-8 minutes.

  4. Add the baby spinach and cook for another minute.

  5. Check for seasoning and serve on toast or with your favorite sides.
