Easy Vegan Tofu Scramble

Ingredients

  • 150g firm tofu
  • Drizzle of olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tbsp nutritional yeast
  • A generous pinch of black salt
  • A pinch of turmeric
  • A dash of unsweetened oat milk
  • Handful of baby spinach (optional)

Preparation

  1. Crumble the tofu with your hands and add it to a pan with a drizzle of olive oil.

  2. Add all the other ingredients except the spinach and cook on medium heat for 5-8 minutes.

  3. Add the baby spinach and cook for another minute.

  4. Check for seasoning and serve on toast or with your favorite sides.

Notes

  1. This recipe serves one person.

  2. Can be enjoyed as part of a brunch bowl with roasted sweet potatoes, pan-fried mushrooms, and avocado.
