Vegan Cheeseburger
Ingredients
Patties
- 1 can black beans, drained and rinsed
- 1 cup cooked quinoa
- 1 cup chopped beets (approximately 1 large beet)
- 1/2 cup oat flour (or brown rice flour)
- 1 chia egg (1 tbsp chia seeds + 3 tbsp water)
- 1/4 medium onion, chopped
- 2 cloves of garlic
- 1 tsp cumin
- 1 tsp dried thyme
- 1/2 tsp chile powder
- 1/2 tsp paprika
- 1/2 tsp salt (adjust to taste)
- Black pepper (several pinches)
For Assembly
- Vegan BBQ Sauce (recipe available on the author's feed or IG Stories)
- Vegan Cheddar Cheese (recipe coming soon)
- Lettuce
- Tomato
- Onions
- Buns (vegan)
Preparation
Steam the beets for approximately 10 minutes. Allow them to cool before peeling off the skin.
In a food processor, pulse the beets, onion, garlic, and black beans until mostly smooth. Add the spices and mix to combine.
Transfer the beet mixture to a medium bowl. Add cooked quinoa and chia egg, and mix well. Then add oat flour and mix until fully combined.
Shape the mixture into 6 patties and place them on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for 20 minutes, flipping once halfway through for even cooking. If flipping is difficult, let them cool for a couple of minutes outside the oven before flipping and baking for the remaining 10 minutes.
To assemble the cheeseburger, spread a layer of Vegan BBQ Sauce on both slices of the bun. Place a patty on the bottom bun, add a slice of Vegan Cheddar Cheese, lettuce, tomato, and onions.
Customize your burger with additional toppings like avocado, sprouts, etc.
