Southwest Tofu Breakfast Scramble

Ingredients

  • 1/4 red onion
  • 1/2 bell pepper
  • 3-4 mushrooms
  • 6 oz extra firm tofu
  • 1 TBSP nutritional yeast
  • salt and pepper
  • chili powder
  • 1/4 cup black beans
  • 1/4 cup cooked rice (optional)
  • Daiya vegan cheddar
  • handful of tomatoes
  • 2 handfuls of spinach
  • 1/4 avocado
  • spoonful of almond milk greek yogurt
  • salsa

Preparation

  1. Sauté veggies in a large cast iron skillet until tender.

  2. Add in tofu and mash with a wooden spoon. Sprinkle with seasonings and add 1 TBSP water or almond milk if needed. Stir to combine.

  3. Add in beans and rice. Heat through and sprinkle with cheese.

  4. In a separate sauce pan, steam spinach.

  5. Serve together hot, topped with fresh tomatoes, avocado, Greek yogurt, and salsa.
