Southwest Tofu Breakfast Scramble
Ingredients
- 1/4 red onion
- 1/2 bell pepper
- 3-4 mushrooms
- 6 oz extra firm tofu
- 1 TBSP nutritional yeast
- salt and pepper
- chili powder
- 1/4 cup black beans
- 1/4 cup cooked rice (optional)
- Daiya vegan cheddar
- handful of tomatoes
- 2 handfuls of spinach
- 1/4 avocado
- spoonful of almond milk greek yogurt
- salsa
Preparation
Sauté veggies in a large cast iron skillet until tender.
Add in tofu and mash with a wooden spoon. Sprinkle with seasonings and add 1 TBSP water or almond milk if needed. Stir to combine.
Add in beans and rice. Heat through and sprinkle with cheese.
In a separate sauce pan, steam spinach.
Serve together hot, topped with fresh tomatoes, avocado, Greek yogurt, and salsa.
