Vegan Tofu Breakfast Wrap
Ingredients
- Black beans
- Bell peppers
- Onions
- Spinach
- Pico de gallo
- Tortilla wrap or bowl option
Tofu scramble components
- 1 (450g) block of extra firm tofu, drained
- 1 tablespoon soy sauce (or more to taste)
- 1 heaping tablespoon tahini
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Pinch of turmeric
- 1/4 cup unsweetened almond milk
- Salt and pepper to taste
- 1 tablespoon nutritional yeast (optional)
Preparation
Crumble the drained tofu into a pan over medium heat.
Add soy sauce, tahini, garlic powder, onion powder, turmeric, almond milk, and nutritional yeast if using.
Stir the tofu mixture well and cook until it absorbs the liquid and becomes soft and fluffy.
Season with additional salt and pepper to taste, then remove from heat.
Sauté bell peppers and onions in a pan until softened.
Assemble the wrap by filling a tortilla with tofu scramble, black beans, sautéed peppers and onions, spinach, and pico de gallo.
Serve in a wrap or as a bowl if preferred.
