Protein-Packed Vegan Breakfast Burrito

Ingredients

Tofu Scramble

  • 1 (450g) block of extra firm tofu, drained
  • 1 tbsp soy sauce (or more to taste)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Pinch of turmeric
  • 1 heaping tbsp tahini
  • 1/4 cup unsweetened almond milk
  • Salt and pepper to taste
  • 1 tbsp nutritional yeast (optional)

Breakfast Wrap

  • Tofu scramble (prepared as mentioned above)
  • Marinated black beans
  • Sautéed peppers and onions
  • Spinach
  • Pico de gallo
  • Your favorite wrap (or enjoy in a bowl)

Preparation

Prepare the Tofu Scramble

  1. In a pan over medium heat, crumble the tofu and add soy sauce, garlic powder, onion powder, turmeric, tahini, and almond milk (add nutritional yeast if using).

  2. Stir the tofu mixture well and cook for a few minutes until it looks soft and fluffy.

  3. Season with salt and pepper to taste.

  4. Remove from heat and set aside.

Assemble the Breakfast Wrap

  1. Lay out your favorite wrap.

  2. Spread a layer of tofu scramble on the wrap.

  3. Add marinated black beans, sautéed peppers and onions, spinach, and pico de gallo on top of the tofu scramble.

Roll and Enjoy

  1. Roll up the wrap, enclosing the fillings.

  2. If desired, you can also enjoy the fillings in a bowl without the wrap.
