Scrambled Vegan Eggs

Ingredients

  • 1 tbsp avocado oil
  • 1/2 small red onion, sliced
  • 2 cloves garlic, minced
  • 1 can chickpeas, drained
  • 1/4 tsp turmeric
  • 2 tbsp nutritional yeast
  • 2 handfuls spinach
  • salt and pepper
  • squeeze of fresh lemon juice
  • water as needed
  • 1 tbsp vegan butter or additional olive oil

Preparation

  1. In medium-high heat add 1 tbsp avocado oil and sauté the onion with garlic with a pinch of sea salt

  2. Add chickpeas and smash them with a fork partially. Then add the turmeric, salt, pepper, nutritional yeast, spinach and a splash of water. Cook for about 5 minutes or so and last add some lemon juice. When it’s done turn off the heat and add some vegan butter or olive or coconut oil

  3. Serve with rice cakes or toast, some avocado and tomatoes!! Garnish with cilantro and some crushed peppers
