Creamy Cheesy Broccoli Soup

Ingredients

  • 1 can full-fat coconut milk
  • 4 cups water (or vegetable broth)
  • 1 big head of broccoli, chopped
  • 2 big carrots
  • 1 leek, chopped
  • 6 cups spinach
  • 1 onion
  • 3 cloves garlic, chopped
  • 1/4 cup nutritional yeast
  • 1 tsp or more cayenne
  • 2 tsp cumin
  • Salt and pepper to taste

Preparation

  1. In a large pot, sauté the onion (with oil or water).

  2. Add the garlic and leek and sauté for a minute or so.

  3. Add the remaining ingredients and close the lid. Cook over medium-high heat until the veggies are soft. Add more water or vegetable broth if needed.

  4. For a creamy soup consistency, blend half of the soup or more.

  5. Serve with fresh cilantro and sourdough bread or any grains you like.
