Creamy Cheesy Broccoli Soup
Ingredients
- 1 can full-fat coconut milk
- 4 cups water (or vegetable broth)
- 1 big head of broccoli, chopped
- 2 big carrots
- 1 leek, chopped
- 6 cups spinach
- 1 onion
- 3 cloves garlic, chopped
- 1/4 cup nutritional yeast
- 1 tsp or more cayenne
- 2 tsp cumin
- Salt and pepper to taste
Preparation
In a large pot, sauté the onion (with oil or water).
Add the garlic and leek and sauté for a minute or so.
Add the remaining ingredients and close the lid. Cook over medium-high heat until the veggies are soft. Add more water or vegetable broth if needed.
For a creamy soup consistency, blend half of the soup or more.
Serve with fresh cilantro and sourdough bread or any grains you like.
