Vegan Fiesta Sauce with Sweet Potato Blend

Ingredients

  • 1 tsp miso paste
  • 1/4 cup almond flour
  • 3 tbsp nutritional yeast
  • 1 small sweet potato
  • 1 cup unsweetened plain almond milk
  • 1/4 small onion
  • 3 garlic cloves
  • 2 tsp hot sauce
  • 1 tsp smoked paprika
  • 1/2 tsp chipotle powder
  • 1/2 tsp cumin
  • Salt to taste

Preparation

  1. Bring a saucepan of water to a boil.

  2. Peel the sweet potato, cut into small cubes, and place in the boiling water for 6-8 minutes or until easily pierced.

  3. Strain the potatoes using a colander and place in a blender.

  4. Optionally, in the same pan, add onion and garlic and sauté until onions are softened, about 3 minutes.

  5. Add the onion and garlic to the blender with the potato and the remaining ingredients except salt.

  6. Cover the blender and blend on high until the sauce is fully smooth.

  7. Taste the sauce and add salt to taste, adjusting based on preference.

  8. Adjust the consistency with extra milk or water as desired.
