Buffalo Chickpea Veggie Burgers

Ingredients

  • 1 15-ounce can of chickpeas (rinsed and drained, patted dry and peeled)
  • 1/2 finely diced onion
  • 1 small zucchini finely grated and patted dry
  • 1/2 cup oats (use gluten free if needed)
  • 2 tablespoons nutritional yeast
  • 2 teaspoons garlic
  • 1/2 to 1 teaspoon salt
  • 3 tablespoons hot sauce

Preparation

  1. Rinse, pat dry, and peel the skins off the chickpeas. To rub the skins off, place between a cloth and rub back and forth.

  2. Add the chickpeas to a food processor, pulse, then remove and add to a bowl.

  3. Add oats to a food processor, pulse, then add to the bowl.

  4. Add all of the other ingredients to the bowl and mix together with a spatula. Then press into a dough and form 6 patties.

  5. Heat a skillet over medium heat.

  6. Add olive oil or avocado oil to the skillet.

  7. Cook the patties for 5 minutes, flip, and cook for another 5 minutes until both sides are crispy.
