Buffalo Chickpea Burgers

Ingredients

  • small onion
  • 1 tsp salt
  • 1 tbs olive oil
  • 1 shredded carrot
  • garlic
  • 3 cups cooked chickpeas
  • 1/3 cup hot sauce
  • 1 cup cooked/cooled quinoa

Preparation

  1. In a skillet, sauté one small onion (diced) with 1 tsp salt in 1 tbs olive oil - medium heat, 8 minutes

  2. Add 1 shredded carrot & 2 cloves roughly chopped garlic - sauté for another couple minutes

  3. Mash onion mixture with 3 cups cooked chickpeas (2 cans, drained) until a smooth-but-textured batter is formed (you can do this with a blender, processor or potato masher)

  4. Add 1/3 cup hot sauce & 1 cup cooked/cooled quinoa, stir to combine

  5. In a small bowl, combine 1 tbs ground flaxseeds with 3 tbs water - allow to sit for 5 minutes - stir “flax egg” into chickpea mixture

  6. Stir in 3-4 tbs arrow root starch, season with salt to taste

  7. Form into 4 patties, brown patties in a skillet with olive oil over medium heat, 3-5 min per side

  8. Bake in 375 degree oven for 8 minutes

  9. Brush the tops of each burger with more hot sauce, drizzle with ranch dressing
