Vegan Brazil Nut Pesto
Ingredients
- 1/2 cup raw Brazil nuts from @souflorestaempe
- 1/2 cup water
- 1 tablespoon lemon juice
- 1/4 cup nutritional yeast
- 2 cloves garlic
- 1/2 teaspoon salt (or to taste)
- 1 teaspoon cayenne (optional)
- Freshly ground black pepper
- 3 cups packed fresh basil leaves
- 1 handful spinach
Preparation
In a blender, combine raw Brazil nuts, water, lemon juice, nutritional yeast, garlic, salt, cayenne (if using), and freshly ground black pepper.
Add in the fresh basil leaves and spinach to the blender.
Blend all the ingredients until the mixture becomes as smooth as possible.
The pesto is now ready to use. It can be stored in the refrigerator in a container.
Serve the pesto with your favorite dishes like spiraled zucchini, gnocchi, wraps, pizzas, breads, and even burgers.
