Vegan Cream Coulifllower Alfredo

Ingredients

  • 2 cups cauliflower florets
  • 2 cloves garlic
  • avocado oil
  • 1 cup unsweetened nut milk
  • 1 cup vegetable broth
  • 2 basil leaves
  • 1 tbs parsley
  • 1 tsp oregano
  • 1 tsp thyme
  • 2 tbs nutritional yeast
  • salt
  • [lemon] pepper
  • 1/2 lemon

Preparation

  1. In a large sauce pan, add 2 cups cauliflower florets and 2 cloves garlic over hot avocado oil

  2. Sauté for 5 minutes

  3. Add 1 cup unsweetened nut milk, 1 cup vegetable broth, 2 basil leaves, 1 tbs parsley, 1 tsp oregano, 1 tsp thyme, 2 tbs nutritional yeast, salt, [lemon] pepper, 1/2 lemon

  4. Cover and let simmer for 20 minutes

  5. Blend! Pour over pasta
