Creamy Vegan Cauliflower Alfredo
Ingredients
- 2 cups cauliflower florets
- 2 cloves garlic
- avocado oil
- 1 cup unsweetened nut milk
- 1 cup vegetable broth
- 2 basil leaves
- 1 tablespoon parsley
- 1 teaspoon oregano
- 1 teaspoon thyme
- 2 tablespoons nutritional yeast
- salt
- lemon pepper
- 1/2 lemon
Preparation
In a large saucepan, add 2 cups cauliflower florets and 2 cloves garlic over hot avocado oil. Sauté for 5 minutes.
Add 1 cup unsweetened nut milk, 1 cup vegetable broth, 2 basil leaves, 1 tablespoon parsley, 1 teaspoon oregano, 1 teaspoon thyme, 2 tablespoons nutritional yeast, salt, lemon pepper, and 1/2 lemon. Cover and let simmer for 20 minutes.
Blend the mixture.
Pour over pasta.
