Vegan Creamy Cauliflower Alfredo

Ingredients

  • 2 cups cauliflower florets
  • 2 cloves garlic
  • avocado oil
  • 1 cup unsweetened nut milk
  • 1 cup vegetable broth
  • 2 basil leaves
  • 1 tablespoon parsley
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 2 tablespoons nutritional yeast
  • salt
  • lemon pepper
  • 1/2 lemon

Preparation

  1. In a large sauce pan, add 2 cups cauliflower florets and 2 cloves garlic over hot avocado oil. Sauté for 5 minutes.

  2. Add 1 cup unsweetened nut milk, 1 cup vegetable broth, 2 basil leaves, 1 tablespoon parsley, 1 teaspoon oregano, 1 teaspoon thyme, 2 tablespoons nutritional yeast, salt, lemon pepper, and 1/2 lemon. Cover and let simmer for 20 minutes.

  3. Blend the mixture.

  4. Pour the sauce over pasta.
