Vegan Mac and Cheese

Ingredients

  • 1/2 cup cauliflower florets
  • 1 small carrot (about 4 inches)
  • 1/4 white onion
  • 2 garlic cloves
  • 1/4 of a medium potato
  • 1/4 cup nutritional yeast
  • 1/2 cup vegetable broth
  • 1 tbsp lemon juice
  • 1 tsp turmeric
  • Salt and pepper to taste
  • 1/4 cup follow your heart cheese (optional)
  • 12 oz pasta, such as chickpea pasta

Preparation

  1. Bring water to a boil in a small pot, then reduce to a simmer and add all the vegetables. Cook for 15 minutes.

  2. Meanwhile, add lemon juice, nutritional yeast, vegetable broth, turmeric, salt, and pepper to the blender.

  3. When the vegetables are done cooking, drain them and add to the blender. Blend until smooth. Add the mixture to your favorite type of pasta and stir in the optional cheese to melt.
