Saucy and Super Creamy pasta

Ingredients

  • 1/2 cup vegetable broth
  • 1 cup tomato sauce
  • 1/2 cup soaked cashews
  • 1/4 cup potato
  • 2 baby carrots or 1/4 cup diced
  • 1 tbsp minced garlic or garlic powder
  • 1/4 cup nutritional yeast
  • 3 tbsp lemon juice
  • 1 tsp cayenne powder or red pepper flakes
  • salt and pepper to taste

Preparation

  1. Soak cashews in boiling hot water for 30 minutes or 4 hours room temp water

  2. Boil small pot of water to cook potato and carrots. Cook until soft and then drain water

  3. Add cooked veggies to a blender along with all other ingredients and blend until smooth

  4. Add to your favorite pasta and veggies and enjoy! Remember to avoid adding too much pasta to keep it nice and creamy. I normally add about 4 cups of cooked pasta and I get a good consistency
