Pasta in Creamy and Flavourful Tomato Sauce

Ingredients

  • for pasta sauce
  • 300 grams of cherry tomatoes
  • 1 shallot
  • 1 garlic clove
  • 1 tbsp of olive oil
  • 1 tbsp of tomato paste
  • bunch of basil leaves
  • 2 tbsp of nutritional yeast

Preparation

  1. Finely chop the onion and garlic and fry it in 1 tbsp of olive oil with a pinch of salt till fragrant

  2. Meanwhile, half cherry tomatoes and add them to the pan as well with a generous pinch of salt and pepper

  3. Breaking them down with a back of the spoon, cook till they start to release the juices

  4. Pour over the coconut milk and sprinkle nutritional yeast, allow to simmer for about 5 minutes to thicken slightly

  5. Stir in basil leaves and check for seasonings, adjust if needed

  6. Add a generous dollop of the sauce to your ready pasta, stir it in so everything is nicely coated and serve straight away

  7. Transfer the rest of the sauce to a jar

  8. Keeps in the fridge for 5 days
