Pasta in Creamy and Flavourful Tomato Sauce
Ingredients
- for pasta sauce
- 300 grams of cherry tomatoes
- 1 shallot
- 1 garlic clove
- 1 tbsp of olive oil
- 1 tbsp of tomato paste
- bunch of basil leaves
- 2 tbsp of nutritional yeast
Preparation
Finely chop the onion and garlic and fry it in 1 tbsp of olive oil with a pinch of salt till fragrant
Meanwhile, half cherry tomatoes and add them to the pan as well with a generous pinch of salt and pepper
Breaking them down with a back of the spoon, cook till they start to release the juices
Pour over the coconut milk and sprinkle nutritional yeast, allow to simmer for about 5 minutes to thicken slightly
Stir in basil leaves and check for seasonings, adjust if needed
Add a generous dollop of the sauce to your ready pasta, stir it in so everything is nicely coated and serve straight away
Transfer the rest of the sauce to a jar
Keeps in the fridge for 5 days
