Creamy Healthy Mushroom Pasta

Ingredients

  • 290g silken tofu, drained weight
  • 50ml unsweetened almond milk cream cheese
  • 3-4 tbsp nutritional yeast
  • 1/2 tsp fine sea salt
  • 1/4 tsp found black pepper
  • 1 tbsp olive oil
  • 2 large cloves garlic
  • 120g chestnut mushrooms
  • 50g oyster mushrooms
  • 160g fettuccine, uncooked weight

Preparation

  1. Boil the pasta

  2. I prefer a long pasta for this recipe

  3. Blend all the ingredients for the sauce together

  4. Heat the olive oil on a low tk medium heat

  5. Add in the chestnut mushrooms and garlic

  6. Cook for a couple of minutes

  7. Add in the oyster mushroom and cook for another couple of minutes

  8. Add in the blended sauce and cook for 2-3 minutes

  9. Add in the pasta and stir together

  10. Add in 3-4 tbsp of the pasta water to make the sauce silky and cosy the pasta well

  11. Serve immediately
