Creamy Healthy Mushroom Pasta
Ingredients
- 290g silken tofu, drained weight
- 50ml unsweetened almond milk cream cheese
- 3-4 tbsp nutritional yeast
- 1/2 tsp fine sea salt
- 1/4 tsp found black pepper
- 1 tbsp olive oil
- 2 large cloves garlic
- 120g chestnut mushrooms
- 50g oyster mushrooms
- 160g fettuccine, uncooked weight
Preparation
Boil the pasta
I prefer a long pasta for this recipe
Blend all the ingredients for the sauce together
Heat the olive oil on a low tk medium heat
Add in the chestnut mushrooms and garlic
Cook for a couple of minutes
Add in the oyster mushroom and cook for another couple of minutes
Add in the blended sauce and cook for 2-3 minutes
Add in the pasta and stir together
Add in 3-4 tbsp of the pasta water to make the sauce silky and cosy the pasta well
Serve immediately
