Creamy Tomato Sauce Linguine
Ingredients
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1 tsp cumin
- 1/2 tsp paprika
- 1 tbsp tomato paste
- 1 medium zucchini, chopped
- 1 large tomato, chopped
- 1/2 cup fresh sweetcorn
- 7 oz gluten-free linguine
- 1 1/2 cups unsweetened oat milk
- 1 7-oz can chopped tomatoes
- 1/2 cup water/veggie broth
- 2 tbsp tamari
- 1/2 cup frozen peas, thawed
- 1/4 cup nutritional yeast
Preparation
Heat the olive oil in a non-stick saucepan. Add the onion and the garlic, sautéing for around 2 minutes. Then, add the cumin, paprika and tomato paste, sautéing for around 2 minutes more, until soft and fragrant
Add the zucchini, tomato and sweetcorn. Sauté for 4-5 minutes, allowing the vegetables to soften
Add the linguine together with the oat milk, chopped tomatoes and water/veggie broth
Around 5 minutes into the cooking process, add the tamari, peas and nutritional yeast. Simmer for a further 10 minutes, stirring occasionally, until the sauce is thick and creamy
