Creamy Tomato Sauce Linguine

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1 tbsp tomato paste
  • 1 medium zucchini, chopped
  • 1 large tomato, chopped
  • 1/2 cup fresh sweetcorn
  • 7 oz gluten-free linguine
  • 1 1/2 cups unsweetened oat milk
  • 1 7-oz can chopped tomatoes
  • 1/2 cup water/veggie broth
  • 2 tbsp tamari
  • 1/2 cup frozen peas, thawed
  • 1/4 cup nutritional yeast

Preparation

  1. Heat the olive oil in a non-stick saucepan. Add the onion and the garlic, sautéing for around 2 minutes. Then, add the cumin, paprika and tomato paste, sautéing for around 2 minutes more, until soft and fragrant

  2. Add the zucchini, tomato and sweetcorn. Sauté for 4-5 minutes, allowing the vegetables to soften

  3. Add the linguine together with the oat milk, chopped tomatoes and water/veggie broth

  4. Around 5 minutes into the cooking process, add the tamari, peas and nutritional yeast. Simmer for a further 10 minutes, stirring occasionally, until the sauce is thick and creamy
