Baked Potatoes with a Nice Filling

Ingredients

  • a big handfull of spinach
  • 390g of crushed tomatoes with chili
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp salt
  • cashew cream:
  • 200 ml natural cashews
  • 1 clove of garlic
  • 2 dl water
  • 2 tbsp lemon juice
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt

Preparation

  1. Add diced onion to a pan and let it fry for a minute. Then, continue adding the beans, tomatoes and the spinach and let everything cook down. Pour the crushed tomatoes over the mix, add the spieces and stir. Serve the bean mix to your potatoes

  2. Soak the cashews in hot water for about 10 minutes

  3. Then add them + all of the other ingredients to a mixer and blend for a couple of minutes until you have a smooth cashew cream

  4. Add on top of your potatoes
