Creamy Vegan Mac and Cheese

Ingredients

  • 1 1/2 cups raw cashews
  • 3 tablespoons lemon juice
  • 3/4 cup water
  • 1 1/2 teaspoon salt
  • 1 tablespoon nutritional yeast
  • Pepper
  • 1 garlic clove
  • 1/2 teaspoon paprika
  • Elbow pasta or pasta of choice

Preparation

  1. In a blender place cashews, garlic, lemon juice, 1 1/2 teaspoon of salt, pepper, paprika, nutritional yeast, water and blend. Set aside.

  2. Cook elbow pasta as per instructions or pasta of choice. Add the pasta to the cheese mixture and combine.
