Smoky Vegan Mac and Cheese
Ingredients
- 1/2 tsp oregano
- 1 tsp paprika
- 1/2 tsp salt, more to taste
- 1 1/2 cups sweet potato (1 small potato), skin removed, cubed
- 1/3 cup hemp hearts
- 1 1/2 cup water
- 1/2 cup broth
- 1/4 cup nutritional yeast
- 1 tsp dijon mustard
- 1 tbsp lemon juice
- 4-6 oz pasta of choice
Preparation
To serve:Red chili flakes Chopped kale, optional
In a medium saucepan begin sautéing garlic and sweet potato for 5-10 minutes. Meanwhile blend your hemp hearts, water, and broth together until a smooth “milk” forms. Set aside.
Add paprika, oregano, and salt to the sweet potatoes and saute for 30 seconds. Pour in hemp mixture and allow to simmer until potatoes are fork tender ~15-20 minutes
Begin boiling your pasta water and cook according to package. Reserve 1 cup pasta water to thin out sauce if needed.
Transfer to a high speed blender with nutritional yeast, dijon mustard, and lemon juice. Blend on high until a smooth sauce forms. Pour over noodles and serve with kale. Add some of the reserved pasta water if needed to thin out sauce.
