Smoky Vegan Mac and Cheese

Ingredients

  • 1/2 tsp oregano⁣
  • 1 tsp paprika⁣
  • 1/2 tsp salt, more to taste⁣
  • 1 1/2 cups sweet potato (1 small potato), skin removed, cubed ⁣
  • 1/3 cup hemp hearts⁣
  • 1 1/2 cup water⁣
  • 1/2 cup broth ⁣
  • 1/4 cup nutritional yeast⁣
  • 1 tsp dijon mustard⁣
  • 1 tbsp lemon juice ⁣
  • 4-6 oz pasta of choice

Preparation

  1. To serve:⁣Red chili flakes ⁣Chopped kale, optional⁣

  2. In a medium saucepan begin sautéing garlic and sweet potato for 5-10 minutes. Meanwhile blend your hemp hearts, water, and broth together until a smooth “milk” forms. Set aside. ⁣

  3. Add paprika, oregano, and salt to the sweet potatoes and saute for 30 seconds. Pour in hemp mixture and allow to simmer until potatoes are fork tender ~15-20 minutes

  4. Begin boiling your pasta water and cook according to package. Reserve 1 cup pasta water to thin out sauce if needed.⁣

  5. Transfer to a high speed blender with nutritional yeast, dijon mustard, and lemon juice. Blend on high until a smooth sauce forms. Pour over noodles and serve with kale. Add some of the reserved pasta water if needed to thin out sauce.​
