Vegan Mac and Cheese

Ingredients

  • 1 cup raw cashew
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 tbl white/yellow/mellow miso
  • 1/2 cup nutritional yeast
  • 1 tsp salt
  • 2 cups oatmilk
  • 1 tbl tapioca starch
  • 2 carrots
  • 1 large sweet potato
  • Makes 8 servings and with the pasta it's 14 grams of plant based protein per serving
  • Add in some sweet peas and/or baked tofu for even more protein

Preparation

  1. Peel sweet potato and carrot

  2. Boil with cashews for 15 min

  3. Brown onion and garlic using a little water at a time instead of oil

  4. Drain boiled ingredients

  5. Add all ingredients into a blender and puree until smooth

  6. Pour over one pound of cooked pasta of your choice
