Vegan Mac'n Cheese

Ingredients

  • 3 cups of whole wheat pasta
  • 1 1/2 tablespoons fresh squeezed lemon
  • around 3/4 cup water depends on consistency
  • 1 medium chopped carrot
  • 1 1/2 teaspoons fine sea salt
  • 1/2 clove garlic
  • 1/6 teaspoon ground nutmeg
  • 1/4 red onion & 1/4 yellow onion finely chopped

Preparation

  1. First, cook the pasta

  2. If you want you can soak the nuts and drain them afterwards for a few hours to make them smoother to blend

  3. While the pasta is cooking, combine the nuts, lemon juice, onions (finely chopped), carrot, water, salt, nutritional yeast (or vegan cheese stirpes), garlic in a high speed blender and blend until you have a creamy consistency

  4. If the mixture is too thick, add 2-4 more tablespoons of water and blend again

  5. Once the pasta is tender, drain and rinse it, then return the pasta to the pot and stir in the cheese sauce

  6. Heat up the sauce a bit along with the pasta and serve it once heated
