Best Ever Vegan Mac N Cheese Recipe

Ingredients

  • 500g macaroni pasta
  • 200g cashews, soaked overnight & drained
  • 1 tub (150g) vegan cream cheese
  • 1/2 lemon, juice of
  • heaped 1/2 cup nutritional yeast
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 tsp turmeric
  • s&p, to taste
  • 140g vegan cheese, grated (i used applewood slices & broke them up)
  • 1/2 cup plant milk (+ more)
  • vegan bacon, chopped into pieces
  • optional)
  • 2 slices of sourdough bread
  • vegan butter

Preparation

  1. Saute the vegan bacon in some oil till nice & crispy

  2. Melt the vegan cheese with the 1/2 cup of milk in a saucepan to make a cheese sauce

  3. Blend the sauce ingredients together with the melted cheese sauce & a splash more milk if necessary until smooth

  4. Drain the pasta, place back in the saucepan & add the cashew cheese sauce

  5. Stir in the bacon

  6. Optional)

  7. Toast the sourdough & blend into breadcrumbs

  8. Melt some vegan butter and stir it into the breadcrumbs

  9. Place the pasta into a large baking dish

  10. Top with the breadcrumbs & bake for 30 mins at 180°c & serve!
