Creamy Vegan Mac and Cheese with @Livivafoods

Ingredients

  • @livivafoods Penne
  • 2 tbsp olive oil
  • 1/2 medium onion (about 50 grams)
  • 2 cloves garlic
  • 1 1/4 cup sweet potatoes (150 grams)
  • 2/3 cup potato (100 grams)
  • 2 cups vegetable broth
  • 1/2 cup cashews
  • 1/4 cup nutritional yeast
  • 1/2 cup coconut milk
  • 1 tbsp lemon juice
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

  1. Add the olive oil, onions, and garlic to a pot. Cook over medium heat for a few minutes until the onion and garlic start to release their flavors.

  2. Add the sweet potatoes, regular potatoes, and vegetable broth to the pot. Cover with a lid and cook until the potatoes have fully cooked and softened.

  3. Remove the pot from heat and transfer all the ingredients to a food processor.

To the food processor, add the soaked cashews*, nutritional yeast, coconut milk, lemon juice, paprika, salt, and pepper.

  1. Note: Soak the cashews overnight or for 1 hour in boiling water before using them in the recipe.

  1. Blend the ingredients until smooth and creamy.

  2. Add the cheesy sauce to your @livivafoods Penne pasta.
