Baked Sweet Potatoes with Cayenne Chickpeas and Creamy Dressing

Ingredients

  • 1 can chickpeas, drained
  • 3 tsp. paprika
  • 1/2 tsp. cayenne
  • pinch of salt and pepper
  • fresh kale or salad mix
  • dressing: (mix everything in food processor)
  • 1/2 cup soaked cashews
  • 2 tbsp. lemon juice
  • 1 garlic clove
  • 2 tbsp. nutrition yeast
  • 1/2 tsp. salt
  • pinch of black pepper
  • water as needed

Preparation

  1. Cut the sweet potatoes lengthwise and place them on a baking sheet facing the flesh down and bake for 30 minutes (depends on a size) on 200C/392F

  2. Add chopped onion on a pan with drizzle of oil or water

  3. Add chickpeas with all the seasoning and saute until the chickpeas become slightly brown

  4. Take the potatoes out of the oven and scoop the insides with a fork, just to tender the insides

  5. For the dressing just mix everything together in a blender

  6. Top the sweet potatoes with salad, chickpeas and a drizzle of the dressing

  7. Yum
