Creamy Butternut Squash Pasta Sauce
Ingredients
- 1 1/2 cup roasted butternut squash
- 1/2 cup soaked cashews
- 3 garlic cloves
- 1/2 white onion
- 2 tbsp lemon juice
- 1/4 cup nutritional yeast
- 1 tsp thyme
- 1 tsp rosemary
- 4-6 sage leaves
- 1 cup water or vegetable broth
- Salt and pepper to taste
Preparation
Soak cashews in boiling hot water for 30 minutes or in room temperature water overnight.
Preheat the oven to 400°F (212°C). Cut the butternut squash in half and brush olive oil on the surface. Roast for an hour to an hour and 15 minutes.
While the squash is roasting, put all the other ingredients in a blender.
Once the squash is done cooking, take it out of the oven and let it cool for 15 minutes.
Add the roasted squash to the blender and blend all the ingredients until creamy and smooth.
Add the sauce to your favorite pasta and enjoy!
